The "USB Audio 2.0 Driver for Windows-Overview & Comparisation" tells me about the maximal 384 kHz Sample rate.
Is this also valid for MC using 8 channels on the I2S interface?

384KHz is only tested for 2 channels - there is no Xmos hardware abailable to do this (we use a one off board for this).
The multichannel board does not have 384KHz ADC/DAC but can handle 192KHz OK
One of the forum members has successfully got 4 channels working using thier own hardware, and with further work it may be possible to get to 6 channels @ 384KHz, but I would expect that to be about the maximum for the current reference design - read here for more details http://www.xcore.com/forum/viewtopic.php?f=8&t=3099
